Oatmeal Banana (maybe Nut) Muffins: Cream together: 1/2 c shortening 1 c sugar Add: 2 eggs and mix. Add: 3 mashed bananas and mix. Sift: 1 1/2 c flour, 1 tsp baking soda 1/4 tsp salt Into the mixture and add: 1/2 c oats. Mix in 1 tap vanilla. Can add in 1/2 - 1 c pecan or walnut pieces (if your kids will eat that sort of thing). Pour into greased muffin pan and cook at 350 for 30 min. Makes 12, but somehow I usually only end up with enough batter for 11.
