Wonderfully detailed instructions on how to make kim chi by Dr. Ben Kim. Don't be afraid if it seems too sweet at first. The yeasts will use up all that sugar and you'll be left with a wonderful sour tang. Just don't go too crazy and eat a ton of it on an empty stomach! Making kimchi is incredibly easy - just a matter of chopping veggies, really. But this fermented veggie mix is so good for you!

This kimchi recipe is spicy and crunchy and salty - it's a great side dish to go with meat and fish when you don't have time to make a salad.
