Récolte et Ecabosage : Il a lieu au maximum dans les 2 à 4 jours qui suivent la cueillette. Les cabosses sont tranchées en deux : cela se fait à la main, en frappant avec un couteau les cabosses pour en extraire les fèves  et la substance blanchâtre qui les entoure (mucilène). Les cabosses sont ouvertes sur le lieu de plantation; on transporte ensuite uniquement les fèves.

Before chocolate was a sweet candy, it was a spicy drink. Some of the earliest known chocolate drinkers were the ancient Maya of Central America. Because chocolate was so important to them, they made offerings to a special God of chocolate, Ek Chuah, who protected their cacao tree fields.
